Much attention to the impact on the environment, as well as to energy efficiency, was given to the construction of the new barrel-aging cellar, as the cellar is entirely underground in order to avoid disturbing the landscape and is entirely neutral in terms of energy use as well. A light-capturing device is  located on the lawn above the roof of the barrel cellar in order to reflect sunlight downwards and avoid the use of electric light. The structure is completed by the fermenting cellars, two additional working spaces, and two tasting rooms.
